Ingredients
- 1/2 tbsp olive oil
- 2 diced chicken breasts
- 1 Kitchens of India paste for chicken curry
- 1/2 cup water
- 1/4 cup cashews
- 2 cups chopped spinach
Directions
- Dice chicken and saute in olive oil until cooked through
- Add curry paste and 1/2 cup water
- Simmer for 20 minutes
- Add cashews and spinach
